Although it is believed that the French were the creators of puff pastry, the Italians claim to have invented and perfected the recipe. The history of puff pastry dates back to the mid 17th century when the French apprentice cook Claude Gelee accidentally created a laminated dough when he was trying to make a butter cake for his sick father.
